If you follow me at all, you know my hubs and I love to cook. It’s one of the things we love to do together, and we bicker at lot while we cook. Our close friends call this “show time” which is not very nice, but super funny. Many of our friends think we should have a reality cooking show, Cooking with Dave and Andie. I think that would ruin the fun.
Here’s one of our favorite and super simple, go to dishes for when you just don’t really feel like cooking or want to impress your friends. Because as simple as it is, the taste is outstanding.
Spagetti with Olive Oil and Garlic.
- Ingredients:
- 1 pound dry spagetti
- Olive Oil 1/4 cup or enough to coat the pan.
- 3 or 4 cloves garlic finely chopped
- 1/4 tsp. Red pepper flake (optional)
- Salt and peper (to taste)
- 1/2 cup Fresh Parmesan plus a little for sprinkling Cheese grated (I do this in my mini food processor)
- 1/2 cup Italian Parsley chopped.
In a large pan, heat the oil and garlic on med. Be careful not to burn the garlic. Give it about 3 minutes and add the red pepper flake, salt and pepper. Let this simmer on low for about ten minutes. The smell is going to be fantasitc!
Boil a large pot of salted water to make the pasta. Make the pasta according to the box. When the pasta is cooked but not mushy, (Probably 9 minutes for regular spagetti) drain the pasta but keep about a cup aside for your sauce. (I pour it into my pyrex measureing cup) Put the cooked spagetti in the oil and coat it. Add about 1/4 of the water and mix. Add the Parmesan and mix. Add the parsley and mix. Now see if you need more water to make enough sauce and add just what you need. (You proably won’t use all the water you set aside.) You don’t want soup. LOL
Now serve it up and sprinkle with some extra parmesan. I’m telling you, so simple and freaking delish!
