We grill a lot all year round. Cold, rain, whatever, we love to grill. Actually we love to cook indoors too. Here’s a winner that’s super easy and will impress your friends.
Fresh Grilled Tuna Steak with Grilled Mixed Vegetables
Holy Cow, this is good! For this one, I do all the prep work and my husband does all the grill work. I don’t really like grilling and I’m not as good at it as he is.
You can use whatever vegetables you like or have on hand. So if there’s something here you don’t like, swap it out for something you love. You can even throw some fresh corn on the cob on the grill with. Rub it with some olive oil and give it a char on all sides. YUM!
I cut everything into about one inch cubes. We have a pan made for the grill and you should get one. If you wanted to you could do this on the stove too, but it’s hard to get the pan hot enough without smoking up you house, so if you have a grill that’s the best way.
A 1 pound tuna steak will feed 2 – 3 people. I think this would be equally good with chicken but will take a bit longer.
For the Vegetables:
Broccoli
Cauliflower
Tomatoes
Onions
Mushrooms
Carrots
Garlic – roughly diced.
You can use as much or as little of these as you like. Put them in a plastic zipper bag with about 2 Tbls of olive oil, Salt, Pepper and red pepper flake. And give the bag a good shake until they are all coated. Set them aside for 20 to 30 minutes.
Season the Tuna. I used back pepper, Tony Chachere’s seasoning, lemon and a little olive oil and rubbed it in on both sides. I set this in the refrigerator for about 10 minuts.
Heat your grill with the grill pan in the grill so it gets good and hot. Add your vegetables to the pan and close the lid. They take 10 to 15 minutes depending on how firm you like your vegetables to be. When the veg is nearly done put your tuna on the grill and sear for about 2 minutes on each side. We like our Tuna really rare. If you don’t, go ahead and cook it longer.
That’s it! I know it’s super simple but it was one of the most delicious meals we’ve ever made. Let me know how yours turns out.
