Look how close we are getting to the holidays. Can you believe it?
I’ve been working on my plans for next year. I have a lot going on and I can’t wait to share it with all of you.
For now let’s see what we have for this week. Jenna Da Sie asked, Do you do a holiday cookie exchange? If so what cookies do you make? If you don’t what treats do you and your family make for the holidays?
I don’t do a swap, but I love to bake cookies. Here’s one of my favorites.
Big Soft Ginger Cookies
Ingredients:
3/4 cup softened butter
1 cup sugar
1 egg
1/4 cup molasses
2-1/4 cups all-purose flour
2 tsp ground ginger
1 tsp baking powder
3/4 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
Additional sugar
Directions:
- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and molasses. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add into the creamed mixture and mix well.
- Roll into 1-1/2 inch balls, then roll in the extra sugar. Place 2 inches apart on an ungreased baking sheet. Bake at 350F for 10-12 minutes until lighty browned. Remove to wire racks to cool.
